Histamines are compounds that are involved in immune responses and gut functions.
So, what is the big deal?
Some, who find they have a "histamine intolerance," experience symptoms when they experience a build up of histamines in the body. Certain foods and additives have higher or lower amounts of histamines.
Elimination diets involve cutting out certain foods from one's diet with the intention of reducing symptoms.
